Ingredients

200 g split red lentils
500 g carrots
3 large potatoes
1 large white onion
2 liters water
1 liter vegetable stock or 2 vegetable bouillon cubes

Instructions

1.Rinse the lentils and drain them.
2.Peel and dice the onion. Peel and dice the carrots and potatoes.
3.In a large pot, sauté the onions in a little bit of oil until they turn translucent. Add the diced carrots and potatoes, the lentils, water, and vegetable stock.
4.Bring to a boil. Skim off any scum that rises to the surface.
5.Simmer uncovered for about 20-30 minutes or until the lentils and vegetables are soft.
6.Let cool a little and purée with an immersion blender until smooth. (Or use a regular blender - but be careful as the soup is hot!).
7.If the soup is too thick, add more water or vegetable stock to adjust the consistency.
8.Season with salt and black pepper to taste. Serve hot.
