Ingredients

8 -12 ounces cavatappi pasta
1 1/2 cups onions , chopped
2 garlic cloves , minced
1/2 teaspoon red pepper flakes
1/4 cup olive oil
3/4 cup dry white wine
2 cans diced tomatoes with juice
salt and pepper , to taste
1 1/2 cups freshly grated pecorino romano cheese
pancetta ( cured italian bacon ) ( optional )

Instructions

1.Firstly, cook pasta in a large pot of boiling water.
2.Heat olive oil in a large skillet over medium heat.
3.Add onions and cook till they become translucent. Following this, add minced garlic and cook for 1 minute over medium heat temperature.
4.Stir in diced tomatoes with its juice and red pepper flakes. Allow it to cook for 5 minutes until fully heated and while, stirring occasionally.
5.Add the white wine and cook till it reduces by half (5-10 minutes).
6.Once the pasta is cooked, slowly drain them in a colander. Keep aside 1/2 cup of pasta water.
7.Now, stir in pasta, pecorino romano cheese, salt, and black pepper to taste in a skillet.
8.Add pancetta (cured Italian bacon) for extra flavor.
9.Finally, drizzle the remaining 1/2 cup of pasta water to the pasta if you feel it's too dry. Stir the pasta well over low-medium heat until the cheese melts and the pasta becomes creamy.
10.Garnish with grated cheese on top of the pasta.
