Ingredients

2 lbs flank steaks
1/2 lb shrimp , peeled and deveined or
1 cup shucked oyster
1/2 cup corn kernels , from grilled corn on the cob or corn , canned
1/4 cup breadcrumbs
1 tablespoon olive oil
6 garlic cloves , pureed
1 tablespoon cilantro , coarsely chopped
fresh ground black pepper , to taste

Instructions

1.Preheat the oven to 350°F.
2.Lay the flank steak flat on a cutting board and make 2-inch pockets in it using a sharp knife.
3.In a mixing bowl, mix together the shrimp (or oyster), corn, breadcrumbs, olive oil, garlic, cilantro and black pepper to taste.
4.Stuff the mixture into the pockets in the flank steak.
5.Tie the steak with kitchen twine to keep the stuffing inside.
6.Heat a cast-iron skillet over medium-high heat and add oil.
7.Place the steak in the skillet and sear for 4-5 minutes on each side, or until browned.
8.Transfer the skillet to the preheated oven and cook for 15-20 minutes, until the internal temperature reaches 135°F for medium-rare or 145°F for medium.
9.Remove from the oven and let the steak rest for 5-10 minutes before slicing and serving.
