Ingredients

1 bunch green onion
1 firm-hearted lettuce
2 ounces butter
salt
2 bunches carrots
black pepper
sugar
1 tablespoon chopped parsley
1 tablespoon chopped chives

Instructions

1.Cut the green onion in 1 inch pieces. Chop off the greens of the lettuce and cut the heart into julienne strips. Cut the butter into small pieces.
2.Drop the carrots in a pot of boiling salted water. Boil until the carrots are just done. Drain and put back into the empty pot.
3.Add the butter. Sprinkle with salt, black pepper, and a pinch of sugar, and stir over medium heat until the butter has melted and the carrots are glazed. Stir in the parsley. Turn into a hot serving dish.
4.In the same frying pan put the chopped onions and lettuce and stir rapidly over high heat until wilted. Sprinkle with salt and pepper and chives. Pile the mixture over the center of the carrots in the dish.
