12 flour tortillas

Instructions

1.Preheat the oven to 350°F (175°C).
2.Bring water to a boil in a large saucepan, then add chicken breasts, beef bouillon, and chicken broth. Reduce heat and simmer for 20 to 30 minutes until chicken is no longer pink.
3.Drain the chicken and reserve 1 cup of the broth in a separate container. Shred the chicken.
4.In a large skillet over medium heat, sauté onions and red bell pepper until soft, about 5 minutes. Add the cream of mushroom soup, cream of chicken soup, diced tomatoes with green chile peppers, and 1 cup of reserved broth. Stir until smooth and bring to a boil. Add shredded chicken and chili beans and cook for a few more minutes, until warmed through and thickened.
5.In a greased 9x13 inch baking dish, arrange 6 tortillas to cover the bottom. Spoon half of the chicken mixture over it. Sprinkle a third of the shredded cheese on top. Repeat with another layer of tortillas, chicken mixture, and cheese. Finish with a layer of the remaining shredded cheese.
6.Bake for 25 to 30 minutes, until the cheese is melted and bubbly.
