Instructions

1.In a mixing bowl, whisk together 2 cups of flour, 2 1/4 teaspoons of quick-rising yeast and 1/2 teaspoon of salt.
2.Gradually add 1 1/4 cups of hot water (but not boiling) and mix using a wooden spoon or a mixer's dough hook attachment until you get a soft dough.
3.Sprinkle 1/2 to 1 cup of flour onto your work surface, and knead the dough for about 5 minutes until it becomes smooth and elastic.
4.Cover the dough with a plastic wrap, and rest for 30 minutes or until it doubles in size.
5.Preheat the oven to 450°F (230°C).
6.Divide the dough into 8 equal portions and shape each portion into a ball. Roll each ball into a flat disk, about 7-8 inches (18-20 cm) in diameter.
7.Place the disks onto a baking sheet or a pizza stone, and bake in the oven for 5-6 minutes or until they puff up and become golden brown.
