Ingredients

125 g vegan margarine ( I use Nuttelex )
2/3 cup caster sugar
1 teaspoon vanilla essence
1 egg
1 3/4 cups plain flour , sifted
1/4 cup carob powder

Instructions

1.In a large mixing bowl, cream together the vegan margarine, caster sugar, and vanilla essence until light and fluffy.
2.Add in the egg and mix until well combined.
3.Sift in the plain flour and carob powder and mix until a stiff dough forms.
4.Divide the dough into two equal portions and roll each portion on a lightly floured surface into a rectangular shape.
5.Carefully place one rectangle of dough on top of the other and press gently to join them together.
6.Roll the dough tightly into a log shape and wrap in cling film.
7.Freeze for 30 minutes or until firm.
8.Preheat the oven to 180°C (350°F) and line a baking tray with baking paper.
9.Remove the dough from the freezer and slice into even rounds.
10.Arrange the rounds on the baking tray and bake for 12-15 minutes or until golden brown.
