1 teaspoon dried thyme , divided
1 teaspoon dry oregano , divided
2 teaspoons salt , divided
1 teaspoon black pepper , divided
2 tablespoons dried parsley , divided
2 eggs
1/2 cup oatmeal
1 1/2 cups parmesan cheese , shredded
32 ounces ricotta cheese
1/2 teaspoon ground nutmeg
8 -16 ounces mozzarella cheese , shredded
2/3 lb pepperoni , chopped into small pieces

Carnivore's Lasagna is a hearty and indulgent version of the classic Italian dish. It's a delicious combination of ground beef, hot Italian sausage, and chopped pepperoni mixed with a savory tomato sauce made with fennel seed, basil, thyme, oregano, salt, and pepper. Layered between lasagna noodles, the meat mixture becomes creamier and more flavorful with a combination of ricotta cheese, parmesan cheese, and eggs. This recipe is easy to make and perfect for serving a crowd.

Instructions

1.Preheat the oven to 375°F.
2.In a large skillet, heat the olive oil over medium heat.
3.Add the ground beef, Italian sausage, onion, and garlic. Cook until the meat is browned.
4.Add the tomato sauce, brown sugar, 1/2 teaspoon fennel seed, 1/2 teaspoon dry basil, 1/2 teaspoon dried thyme, 1/2 teaspoon dry oregano, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1 tablespoon dried parsley. Simmer for about 10 minutes.
5.In a large mixing bowl, whisk the eggs and add the oatmeal, parmesan cheese, ricotta cheese, 1 1/2 teaspoons salt, 1/2 teaspoon black pepper, 1 tablespoon dried parsley, and 1/2 teaspoon ground nutmeg and stir to combine.
6.To assemble the lasagna: Spread a thin layer of sauce on the bottom of a 13x9 inch casserole dish. Place 6 lasagna noodles on top. Spread half of the ricotta mixture over the noodles and sprinkle with 1/3 of the mozzarella cheese and 1/3 of the chopped pepperoni. Repeat this layer once more. Top with the remaining 6 noodles and cover with the remaining sauce, mozzarella cheese and pepperoni.
7.Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 25 minutes or until golden and bubbly. Let it cool for 5 minutes before serving.
