1 cup orange juice

24 corn tortillas

Instructions

1.Preheat oven to 275°F.
2.Mix garlic, oregano, 1 tablespoon salt, and 2 teaspoons pepper in a small bowl.
3.Rub spice mixture all over pork spareribs, then place ribs in a roasting pan.
4.Pour orange juice over, then add enough water to pan to come ¾ up sides of ribs.
5.Cover pan tightly with foil and braise ribs until meat is very tender but not falling apart, 3½–4 hours.
6.Remove ribs from pan and let cool slightly.
7.Shred meat, discarding bones and any large pieces of fat.
8.Skim fat from cooking liquid, then strain liquid; set aside.
9.Heat oil in a large skillet over medium-high.
10.Add onion and moderate seasoning to taste; cook, stirring occasionally, until browned and softened, 8–10 minutes.
11.Add shredded pork and toss to coat.
12.Serve carnitas in tortillas with cole slaw and salsa verde.
