Ingredients

4 tablespoons lard
3 lbs pork ( cut into 2-inch cubes , a combination of country style pork ribs and boneless stewing pork works well )
1/2 medium white onion , roughly sliced
4 fresh marjoram , sprigs or 1/4 teaspoon dried marjoram
4 fresh thyme sprigs or 1/4 teaspoon dried thyme
3 california bay leaves , broken up
10 peppercorns , crushed
1 orange , cut into eighths
1 cup milk
sea salt

Instructions

1.Preheat oven to 300 degrees F.
2.In a Dutch oven over medium heat, melt lard.

5.Add onion, marjoram, thyme, bay leaves, peppercorns, and orange to the Dutch oven.
6.Stir in milk and return pork to Dutch oven.
7.Cover and bake in preheated oven for 2 hours.
8.Remove lid and bake for an additional 30 minutes until the pork is crispy and golden brown.
9.Remove from oven and discard the bay leaves and orange.
10.Shred the pork with two forks and sprinkle with sea salt to taste.
