2 pounds beef chuck steaks
chili powder
1/4 teaspoon onion powder
1/4 teaspoon ground cumin
1/4 teaspoon garlic powder
salt to taste

2 1/2 tablespoons vegetable oil , divided
4 green onions , chopped , divided
4 cloves garlic , peeled
1/2 cup tequila
1/4 cup lime juice
1/4 cup lemon juice
1/4 cup orange juice
1 tablespoon grated fresh ginger
1 kiwi , peeled
6 flour tortillas
1 package shredded mozzarella cheese
2 tablespoons chopped fresh chives

Instructions

1.Preheat the oven to 375°F.
2.Season the beef chuck steaks with chili powder, onion powder, cumin, garlic powder, salt, and black pepper.
3.Heat 2 tablespoons of vegetable oil in a skillet over medium-high heat and add seasoned beef.
4.Cook for about 4 minutes per side until browned.
5.Remove the beef and let it cool for a few minutes before chopping it into small pieces.
6.In the same skillet, add green onions and garlic and cook for 2 minutes.
7.Add tequila, lime juice, lemon juice, and orange juice and bring it to a boil.
8.Stir in the grated ginger, kiwi, and the remaining 1/2 tablespoon of vegetable oil.
9.Simmer for 5 minutes until the sauce thickens and set aside.
10.Warm flour tortillas and spoon the beef into each one.
11.Roll up, seam-side down, and place it into a baking dish.
12.Pour the sauce over the enchiladas and scatter chives and shredded mozzarella cheese on top.
13.Bake for 15-20 minutes until cheese is melted and bubbly. Serve the enchiladas hot!
