Ingredients

2 jalapeno chiles
4 roma tomatoes
1 small white onion , stem end untrimmed and cut into quarters
2 cloves garlic
1/8 teaspoon ground cumin
2 tablespoons chopped fresh cilantro
1 tablespoon freshly squeezed lime juice
1/2 teaspoon sugar
8 cloves garlic , crushed or minced to a paste
1/4 teaspoon ground cumin
1/4 teaspoon pure red chili powder
1/4 teaspoon salt
4 top sirloin steaks
8 new potatoes
3 tablespoons light olive oil
1 tablespoon finely sliced fresh chives
Carne asada is a traditional Mexican dish made from grilled or roasted beef that has been marinated in citrus juices and spices. Instructions

1.Preheat the oven to 400°F (200°C).
2.In a blender, combine the jalapeno chiles, roma tomatoes, white onion, 2 cloves garlic, ground cumin, cilantro, lime juice, sugar, and salt. Puree until smooth to make the salsa roja.
3.In a small bowl, mix together the crushed or minced garlic, cumin, pure red chili powder, and salt. Rub the mixture onto both sides of each top sirloin steak. Set aside.
4.In a large bowl, toss the new potatoes together with 2 tablespoons of light olive oil and salt. Spread them out on a baking sheet and roast in the preheated oven for 25-30 minutes.
5.Heat another tablespoon of light olive oil in a cast-iron skillet over medium-high heat. Cook the sirloin steaks for 3-4 minutes per side or until they are cooked to your desired level of doneness. Let them rest for 5 minutes before slicing against the grain.
6.Serve the carne asada with the roasted new potatoes and drizzle the salsa roja over the top. Garnish with sliced chives and enjoy!
