Carne Adovada is a traditional New Mexican dish made from marinated pork in a spicy red chile sauce that is slow-cooked for hours. This dish is perfect for any time of year, especially during the colder months. It is a popular food for holidays and is often served for Christmas or Easter. The dish is believed to have originated from Spanish colonial times and has been passed down through generations. Carne Adovada is typically served with rice and beans or in burritos.

Instructions

1.Preheat your oven to 350°F.
2.In a saucepan, heat the shortening over medium heat. Add the flour and whisk constantly until it has a light brown color.
3.Add the garlic, dried oregano, and crushed dried Anaheim chiles. Stir everything together until the chiles are coated in the flour mixture.
4.Pour in the water, stir everything and bring the mixture to a simmer. Cook for about 5 minutes to thicken the sauce to the desired consistency.
5.In a separate baking dish or dutch oven, add the pork strips or cubes, then pour the sauce over the pork. Mix well to ensure the pork is coated evenly.
6.Bake in the oven, covered for about 1 and 1/2 hours or until the pork is tender and cooked through. If the sauce dries out during cooking, add a little more water to prevent the dish from burning.
7.Once done, remove from the oven and let it cool for a few minutes before serving. This dish can be garnished with green onions or cilantro. Serve with rice or tortillas.
