Ingredients

1 tablespoon salt , Kosher
1 tablespoon brown sugar , packed
1 1/2 teaspoons dry mustard
1 1/2 teaspoons chili powder
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme , crushed
1/2 teaspoon ground allspice
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon ground black pepper ( set aside 2 1/2 teaspoons of rub mixture )
6 lbs pork back ribs ( about 2 racks )
1/3 cup mango nectar ( see notes )
1 tablespoon cider vinegar ( and reserved rub )
1/2 cup onion , chopped
1 tablespoon vegetable oil
1 cup barbecue sauce
3/4 cup mango nectar
1/4 cup spiced rum ( Captain Morgan )
2 tablespoons honey ( and reserved rub )
These Caribbean Rum Ribs are inspired by the flavors of the tropics and are perfect for summertime BBQs and picnics. Instructions

1.Preheat your grill to medium heat (about 350°F).
2.In a small bowl, mix the salt, brown sugar, dry mustard, chili powder, garlic powder, dried thyme, ground allspice, crushed red pepper flakes, and ground black pepper together. Set aside 2 1/2 teaspoons of the rub mixture for later use.
3.Rub the remaining mixture onto both racks of ribs, ensuring that both sides are evenly covered.
4.Place the ribs on the grill and cook for about 1 1/2 to 2 hours, or until the meat is tender and the internal temperature of the ribs reaches 180°F.
5.In a medium saucepan, heat the reserved rub mixture, mango nectar, cider vinegar, onion, and vegetable oil until the onion is soft and the sauce is fragrant.
6.Add the barbecue sauce, mango nectar, spiced rum, and honey to the saucepan and bring to a boil, stirring frequently.
7.Brush the sauce onto the ribs during the last 10 to 15 minutes of cooking.
8.Remove the ribs from the grill and let them rest for a few minutes before serving.
