3 lbs meaty pork back ribs , cut into 1-to-2-rib portions
2 tablespoons vegetable oil
2 onions , chopped
2 medium fresh mango , seeded , peeled , and chopped
2/3 cup lime juice
1/2 cup honey
1/4 cup rum
2 tablespoons soy sauce
2 teaspoons dry mustard
1 teaspoon jamaican jerk seasoning

Instructions

1.Preheat oven to 350°F.
2.In a small bowl, whisk together brown sugar, thyme, allspice, black pepper, salt, garlic powder, cayenne pepper, nutmeg, and cloves.
3.Rub the spice mixture all over the ribs and place them on a rack in a baking dish.
4.Bake for 1 1/2 to 2 hours, or until the pork is tender.
5.In a medium saucepan, heat oil over medium heat. Cook onions for 5 minutes or until tender. Stir in the mango, lime juice, honey, rum, soy sauce, mustard, and jerk seasoning. Bring to boiling, reduce heat. Simmer, uncovered, for 5 to 10 minutes.
6.Brush the ribs with the mango mixture. Bake the ribs for 30 minutes more, brushing the mango mixture on them every 10 minutes.
