Instructions

1.Preheat oven to 400 degrees F.

3.Set spice mixture aside.
4.Cut pork tenderloins in half crosswise.
5.Rub spice mixture evenly onto all sides of the pork tenderloin halves.
6.In a large ovenproof skillet or baking dish, heat olive oil over medium-high heat.
7.Add the pork tenderloins and sear them for 2-3 minutes on each side, or until browned and crisp.
8.Add the can of pineapple (with juice) to the skillet, using a spatula to scrape the bottom of the skillet to loosen any browned bits.
9.Transfer skillet or baking dish to the oven and bake for 20-25 minutes, or until pork is cooked through (reaching an internal temperature of 145-160 degrees F).
10.While the pork is cooking, make the avocado-pineapple salsa.
11.In a medium bowl, combine the diced avocado, scallions, and diced pineapple.
12.Gently mix the ingredients together.
13.Serve the pork tenderloins with the avocado-pineapple salsa on top.
