4 aubergines , sliced
2 onions , sliced
500 g pumpkin , diced
2 tomatoes , sliced
1 tablespoon chopped chives
1 tablespoon chopped thyme
6 okra , sliced
pepper
500 g cooked pigeon peas

Instructions

1.Cut the salt pork and salt beef into small pieces and place in a large heavy pot. Cook over medium heat until browned and crisp.

4.Reduce heat, cover, and simmer for 1 hour.
5.Add the salt, chopped spinach, aubergines, onions, diced pumpkin, sliced tomatoes, and chopped herbs. Stir to combine.
6.Add the okra and pepper to taste. Simmer for another 30-40 minutes until the vegetables are tender.
7.Add the cooked pigeon peas and continue to simmer for an additional 10-15 minutes to heat through. Serve hot over rice.
