Ingredients

1 tablespoon vegetable oil
4 chicken thighs , bone in , skinless
1 1/2 teaspoons kosher salt , plus more to season chicken
black pepper , freshly ground
1 medium onion , halved and sliced
3 garlic cloves , smashed
1 teaspoon allspice
1/2 cup tomatoes , chopped
4 cups chicken stock
1/2 lb kale , stemmed , leaves chopped
1 lb sweet potato , peeled , halved lengthwise and sliced into 3/4 inch half-moons
4 ounces okra , trimmed , halved lengthwise
2 bay leaves
1 scotch bonnet pepper , pierced ( If you like it spicy , dice it up )
1/2 teaspoon dried thyme
1/3 cup light coconut milk
8 ounces medium shrimp , peeled and deveined

Instructions

4.Remove the chicken from the pot and set it aside on a plate.
5.Add the sliced onion, smashed garlic, and allspice to the pot and cook until the onion is softened, for about 5 minutes.
6.Stir in the chopped tomatoes and chicken stock.
7.Add the chopped kale, sliced sweet potato, trimmed okra, bay leaves, scotch bonnet pepper, and dried thyme.
8.Bring the mixture to a boil, then reduce the heat to low and let it simmer for 25-30 minutes or until the vegetables are tender.
9.Stir in the light coconut milk and add the peeled and deveined shrimp, and cook until the shrimp turn pink, for about 5 minutes.
10.Season with additional salt if needed and serve hot over rice.
