Ingredients

2 cups pinto beans
1/2 cup onion ( thinly sliced )
1/2 cup scallion ( thinly sliced )
0.5 packet sazon goya con culantro y achiote
1/2 tablespoon cumin
1/2 tablespoon dry oregano
1 teaspoon Mexican oregano
3 slices bacon ( chopped )
4 medium basil leaves ( chopped )
4 whole garlic cloves
3 tablespoons olive oil
1 teaspoon salt
1/2 tablespoon fresh ground pepper
Refried beans are a staple in Latin American cuisine, particularly in Mexico and the Caribbean. Unlike its name, ‘refried’ does not refer to the process of frying the beans twice; instead, it’s a misinterpretation of the Spanish word 'frijoles' -- which means 'beans'-- transformed into 'refritos'. This recipe is a stove-top creation which has been modified to include Caribbean and Mexican spices. It is a hearty dish that can be enjoyed with a range of accompaniments, such as rice, cornbread, or tortillas. It's quick, easy, and delicious with its flavorful blend of herbs and spices. Instructions

1.In a large pot, boil the beans with three cups of water, bacon slices, garlic cloves, onion, and scallions.
2.Add cumin and both oreganos to the pot, and then simmer the beans for half an hour, or until they are fully cooked and soft.
3.Remove half of the bean mixture using a slotted spoon, and keep it aside.
4.Using an immersion blender, puree the remaining half of the bean mixture while still in the pot.
5.Add the reserved whole beans to the pureed beans with olive oil and salt, and cook over low heat, stirring constantly, until heated through and creamy.
6.For the final touch, sprinkle chopped basil leaves over the top and serve.
