Ingredients

1 1/2 lbs lean ground beef or 1 1/2 lbs ground turkey
3/4 cup quick oats ( uncooked ) or 3/4 cup old fashioned oats ( uncooked )
3/4 cup onion , finely chopped
1/2 cup catsup
1 egg , lightly beaten
1 tablespoon Worcestershire sauce ( could use soy sauce )
2 garlic cloves , minced
1/2 teaspoon salt
1/4 teaspoon black pepper
2 teaspoons caribbean jerk seasoning
1 can crushed pineapple ( in natural juices )
1 jar mango chutney
1 jalapeno pepper , finely chopped ( optional )
1 tablespoon chopped of fresh mint or 1 tablespoon cilantro
This Caribbean Meatloaf recipe puts a tropical spin on a classic comfort food. By mixing in crushed pineapple and mango chutney, this savory meatloaf becomes a sweet and spicy masterpiece. The use of quick oats or old fashioned oats instead of breadcrumbs makes it a healthier version than traditional meatloaf. Instructions

1.Preheat the oven to 350°F and line a baking pan with parchment paper.
2.In a large bowl, mix together the ground beef or turkey, oats, onion, catsup, egg, Worcestershire sauce, garlic, salt, black pepper, and Caribbean jerk seasoning until well combined.
3.Drain the crushed pineapple and add it to the meat mixture, along with 2 tablespoons of the mango chutney and the jalapeno pepper if using. Mix everything together until well combined.
4.Press the meat mixture into the prepared baking pan, and bake for 40-45 minutes, or until cooked through.
5.In a small bowl, mix together the remaining mango chutney and fresh mint or cilantro. Spread the mixture over the top of the meatloaf and bake for an additional 5-10 minutes, or until the topping is lightly browned.
