Instructions

1.In a large resealable plastic bag, combine crushed pineapple, lime juice, 2 tablespoons cilantro, and Caribbean seasoning.
2.Add flank steak to the bag, seal and marinate in the refrigerator for at least 1 hour or overnight.
3.Preheat grill or grill pan to medium-high heat.
4.Remove steak from marinade, discard remaining marinade, and grill for 6-7 minutes on each side or until desired doneness is achieved.
5.In a medium saucepan, bring water to a boil and add brown rice.
6.Reduce heat, cover and simmer for about 30 minutes until the rice is tender and most of the liquid has been absorbed.
7.Stir in 1 tablespoon cilantro, toasted shredded coconut, and sliced almonds.
8.Serve the grilled flank steak with the coconut rice mixture.
