8 ounces Caribbean jerk marinade ( I use KC Masterpiece )
4 medium red potatoes , washed , thinly sliced with the skin on
1 large onion , sliced into rings
garlic , minced to taste
1 can diced tomatoes with jalapenos
1 cup Caribbean jerk marinade , divided
red pepper flakes , to taste ( optional )
splash Pickapeppa Sauce ( optional )

Instructions

1.Preheat grill to medium heat ( about 350-400 degrees ).
2.Season chicken breasts with salt and black pepper to taste.
3.Place 2-3 slices of red potatoes on each piece of 18 inch long heavy-duty foil.
4.Distribute sliced onions and minced garlic over the top of potatoes.
5.Spoon 2 tablespoons of diced tomatoes with juice over vegetables and place chicken breasts on top of vegetables.
6.Pour 2 tablespoons of Caribbean jerk marinade over each chicken breast.
7.Add more garlic and red pepper flakes over chicken if desired.
8.Fold foil in half lengthwise and twist the edges to create a packet.
9.Grill packets covered for about 25-35 minutes.
10.Open packets carefully, add a splash of Pickapeppa sauce, and enjoy!
