Ingredients

olive oil
850 g uncooked prawns ( shelled and de-veined )
1 lime , juice of
1 onion , chopped finely
2 tomatoes , skinned and chopped
2 tablespoons curry powder ( I use 1 tablespoon normal curry powder and 1 tablespoon hot curry powder because I like a bit of a k )
1 teaspoon fish stock
1 tablespoon fresh chives , chopped
2 fresh pineapple
300 ml water
250 ml coconut milk
1 teaspoon cornflour
chopped chives ( extra for garnish )

Instructions

1.Heat olive oil in a large frying pan over medium heat.
2.Add the prawns, lime juice, and onions to the pan. Cook for 5 minutes or until the prawns are pink and fully cooked.
3.Add the chopped tomatoes, curry powder, fish stock, and chives to the pan. Stir and cook for an additional 3 minutes.
4.Cut the pineapple and scoop out the flesh. Cut the pineapple flesh into small cubes and set aside.
5.In a bowl, whisk together the water, coconut milk, and cornflour.
6.Add the coconut milk mixture to the pan and stir well. Let it simmer for 5 minutes.
7.Once the sauce has thickened, stir in the cubed pineapple.
8.Garnish with extra chopped chives and serve over rice.
