2 eggs , beaten
1/4 cup water
vegetable oil ( for deep frying )

Instructions

1.In a medium bowl, mix together salt, sugar, cornstarch and flour.
2.In another bowl whisk together the beaten eggs and water.
3.Dip each chicken breast into the egg mixture and then into the coconut mixture to coat.
4.In a large skillet, heat the vegetable oil over medium-high heat.
5.Place the chicken breasts in the skillet and cook for 6-7 minutes on each side, or until golden brown.
6.Place the cooked chicken on a paper towel to cool.
7.In a small mixing bowl whisk together the honey mustard sauce ingredients (honey mustard, mayonnaise, lemon juice, garlic powder, salt) and serve as a dipping sauce with the chicken.
