4 skinless , boneless chicken breast halves - pounded to 1/4-inch thickness
1 ripe mango - peeled and cut into eight 1-inch wide strips

1/8 teaspoon finely crumbled dried thyme
2 eggs , beaten
2 cups unsweetened shredded coconut
vegetable oil for deep frying , or as needed
1 lime , juiced
1 lime , cut into wedges

Instructions

9.Remove from the fryer and drain on paper towels.
10.Squeeze lime juice over the chicken bites and serve with lime wedges.
