Ingredients

750 ml 35 % cream
250 ml homogenized milk
100 g sugar
4 sheets gelatin ( soaked in lukewarm water )
rose water , to taste
1/2 tablespoon cardamom powder or 1/2 tablespoon cardamom seed
100 g frozen blueberries
100 g frozen raspberries
50 g caster sugar
100 ml apricot jam
fresh rose petals , one blossom
1 egg white , beaten
25 g caster sugar
Cardamom and Rose Water Panna Cotta with Candied Rose Petals is a creamy dessert with a Middle Eastern flair. Instructions

1.In a medium-sized saucepan, combine the cream, milk, and sugar over medium-high heat.
2.Heat until the sugar has completely dissolved while constantly stirring. Do not boil the mixture.
3.Remove from heat and add in the soaked gelatin sheets. Stir until the gelatin has completely dissolved.
4.Add rosewater and cardamom while stirring the mixture.
5.Pour the mixture into a greased ramekin and allow it to cool at room temperature.
6.Chill for at least 4 hours, or until the panna cotta has completely set.
7.For the candied rose petals, dip the petals in egg whites and then generously coat them with caster sugar. Dry the coated petals overnight.
8.In a saucepan, prepare the raspberry sauce by combining the frozen raspberry, blueberry, caster sugar, and apricot jam. Stir the mixture until the fruits are soft and juicy.
9.To serve, unmold the panna cotta onto a dessert plate. Top with the raspberry sauce and garnish with the candied rose petals.
