12 cardamom pods
200 ml coffee , espresso freshly brewed
200 g dark chocolate
3 eggs
80 ml sour cream
400 g caster sugar
170 g flour
1 teaspoon bicarbonate of soda
35 g cocoa , Dutch
1/4 teaspoon salt
400 g dark chocolate
100 g butter , unsalted
1 tablespoon golden syrup

Instructions

1.Preheat the oven to 180°C/fan160°C/gas 4. Grease and line 2 x 20cm loose-bottomed cake tins.
2.Bash the cardamom pods in a pestle and mortar, then grind the seeds to a powder.
3.In a bowl, pour the hot coffee over the chocolate and stir until it melts.
4.Crack the eggs into a separate bowl, then whisk in the sour cream and caster sugar until creamy.
5.Sieve the flour and bicarbonate of soda into a separate bowl, then stir in the cocoa powder, salt, and cardamom.
6.Gradually whisk the coffee and chocolate mixture into the egg mixture, then fold in the dry ingredients.
7.Pour the mixture into the tins, and bake for 35-40 minutes.
8.Turn out the cakes from the tins and cool on a wire rack.
9.To make the icing, melt the dark chocolate and butter together, then whisk in the golden syrup.
10.Use the icing to sandwich the cakes together and spread on top.
