3 ears corn , silk discarded , husks left on
7 tablespoons butter , unsalted
3 large sweet onions , thinly sliced
4 ounces thick slab bacon , 2x1/4-inch strips

1 small celery rib , coarsely chopped
2 cups arborio rice

Instructions

1.Preheat oven to 400°F.
2.Roast the corn until cooked, approximately 30 to 40 minutes. Once cooked, remove from oven and let cool.
3.Slice the onions thinly. In a large skillet, melt 4 tablespoons of butter over medium-high heat. Add onions and bacon, and cook until the onions caramelize and the bacon is crispy, about 30 minutes.
4.In a large pot, bring chicken broth to a simmer over medium-high heat. Add the coarsely chopped onion, carrot, and celery. Reduce heat to low and let simmer for 30 minutes.
5.While the broth is simmering, melt 3 tablespoons of butter in a large, deep skillet over medium heat. Add the arborio rice to the skillet and cook, stirring constantly, until the rice is golden brown and toasted, about 5 minutes.
6.Add the white wine to the skillet and stir until the wine is absorbed.
7.Add 1 cup of the hot broth to the skillet and stir until the broth is absorbed. Continue to add broth, 1 cup at a time, stirring constantly until each addition is absorbed before adding more. This should take about 20 to 25 minutes.
8.Once the risotto is cooked, add the caramelized onions and bacon. Remove the corn from the cob and add it to the skillet as well. Stir in the Parmesan cheese and season with salt and pepper to taste.
9.Serve hot and garnish with fresh chervil.
