4 tablespoons olive oil
4 red peppers , seeded cut lengthways into 1 cm wide strips
1 large red onion , sliced
300 g dry penne pasta
50 g fresh basil
salt & freshly ground black pepper
freshly grated parmesan cheese , to serve

Instructions

1.Preheat the oven to 200°C (180°C fan) mark 6.
2.Heat the oil in a large frying pan.
3.Add the peppers and onion to the frying pan and cook, over medium heat, for 30-35min, stirring occasionally, until caramelised.
4.Meanwhile, cook the penne according to pack instructions in a large pan of well-salted boiling water.
5.Drain the penne, reserving some cooking water.
6.Mix the penne into the pan with the caramelised onion and pepper mixture, adding some cooking water to help loosen the mixture, if necessary.
7.Roughly chop the basil and stir through the pasta.
8.Serve the caramelized onion and red pepper penne with grated parmesan cheese.
