Ingredients

40 ml olive oil
30 g butter
3 red onions , peeled , halved , thinly sliced
60 ml red wine vinegar
60 g brown sugar
4 eggs
375 ml heavy cream
1 pinch salt
4 sheets phyllo pastry
60 g toasted pine nuts

Instructions

1.Preheat the oven to 200°C.
2.Heat a large frying pan, add the olive oil and butter. Add the onions and cook over a medium heat, stirring occasionally for around 15-20 minutes until caramelised.
3.Add the red wine vinegar and brown sugar. Cook for a further 5 minutes until the sugar has dissolved and the mixture is sticky. Remove from the heat and leave to cool.
4.In a bowl, whisk the eggs, cream and salt together. Set aside.
5.Grease a 23cm tart tin and lay the sheets of phyllo pastry on top of each other, brushing each layer with melted butter and rotating the pastry slightly each time.
6.Fold the pastry sheet in half then press it into the base of the tin, trimming any excess.
7.Scatter the onion mixture and pine nuts over the pastry, then pour over the egg mixture.
8.Bake in a preheated oven for 25-30 minutes until the filling is set and the pastry is golden brown.
