Ingredients

1 kg pumpkin , cubed
3 tablespoons oil
250 g spinach leaves
250 g lettuce leaves
1 red capsicum , chopped
2 tomatoes , chopped
1 small cucumber , cubed
3 tablespoons chopped coriander
3 tablespoons chopped basil
1 red onion , thinly sliced
1 tablespoon chile pepper jam
2 tablespoons lime juice
1 tablespoon soy sauce
1 tablespoon palm sugar
1/4 cup stock

Instructions

1.Preheat oven to 190C (375F).
2.Line two large baking trays with baking paper.
3.Add the pumpkin cubes onto the baking trays and drizzle with 2 tablespoons of oil.
4.Sprinkle some salt and pepper onto the pumpkin cubes and toss until they are coated in the oil and the seasoning.
5.Roast the pumpkin cubes for around 45-50 minutes, until they are golden and caramelised.
6.In a separate bowl, add the chili pepper jam, lime juice, soy sauce, palm sugar and 1 tablespoon of oil. Mix these ingredients thoroughly
7.When the pumpkin is done, leave it to cool down to room temperature.
8.In a large bowl, add the spinach and lettuce leaves, and mix them well.
9.Add the roasted pumpkin, chopped capsicum, chopped tomatoes, cubed cucumber, chopped coriander, chopped basil and thinly sliced red onion to the large bowl of lettuce and spinach.
10.Pour the chili jam dressing over salad and toss it lightly to combine the ingredients.
11.Garnish with extra sprinkle of coriander or basil leaves.
