1/2 tablespoon olive oil ( or 1/4 tablespoon olive oil and 1/4 tablespoon fresh lemon juice )
1 tablespoon lemon zest

Instructions

1.In a large frying pan over medium heat, melt the butter.
2.Add the chopped onion and garlic and cook for about 10 minutes until caramelised, stirring occasionally. Sprinkle sugar over the onions and cook for an additional 5 minutes until they turn golden brown.
3.Crack the eggs into a bowl and whisk them together. Add salt and pepper to taste.
4.Pour the whisked eggs into the frying pan over the caramelised onions. Use a spatula to move the eggs around in the pan, allowing them to cook evenly. Once the omelette is almost set, add crumbled goat cheese, rosemary, sage, oregano, and marjoram. Cook for about a minute more until the cheese is melted and the omelette is fully cooked through.
5.Serve the omelette hot with baby spinach leaves on the side. Drizzle olive oil or olive oil and fresh lemon juice mixture and sprinkle lemon zest over the spinach.
