salt , to taste
fresh ground black pepper , to taste
oil , to drizzle

Instructions

1.In a large frying pan over a medium heat, melt the butter and add the olive oil.
2.Add the frozen sliced onions, chopped leeks and finely chopped Swiss brown mushrooms to the pan.
3.Season with thyme, salt and fresh ground black pepper, and continuously stir the mixture until softened and caramelised.
4.Add minced garlic and stir until fragrant.
5.Sprinkle in brown sugar and stir to combine.
6.Drizzle balsamic vinegar over the mixture and continue stirring until well combined.
7.Remove pan from heat and allow it to cool.
8.Once cooled, place the mixture in a food processor and blend until smooth.
9.Drizzle with oil to serve and enjoy the caramelised onion and mushroom spread with crusty bread.
