Ingredients

1 tablespoon olive oil
350 g red onions , sliced
2 teaspoons light muscovado sugar
2 garlic cloves , crushed
125 ml red wine
200 g feta cheese , diced
50 g walnuts , pieces
270 g frozen phyllo pastry , thawed
50 g melted butter
2 tablespoons sesame seeds
Baklava is a well-known dessert in the Middle East, but Caramelised Onion and Feta Baklava gives a savory twist to this classic sweet dish. It is perfect as an appetizer or side dish for any occasion. The caramelized onions give a sweet and savory flavor while the feta cheese adds a salty layer. The combination of these flavors with the buttery and crispy phyllo pastry and the crunchy walnuts make it an irresistible treat for the taste buds. This dish is easy to prepare and sure to impress your guests.

Instructions

1.Heat the olive oil in a non-stick frying pan over a low heat. Add the onions and cook for 15 minutes until softened but not golden.
2.Increase the heat and add the light muscovado sugar, garlic, red wine and a pinch of salt. Cook for 10-15 more minutes until the onions are caramelized.
3.Preheat the oven to 180C/160C fan/gas 4. In a bowl, mix the feta cheese and walnuts together.
4.Cut a sheet of phyllo pastry into thirds lengthways, brush with melted butter and sprinkle with sesame seeds. Repeat with the remaining phyllo.
5.Place two teaspoonfuls of the onion mixture on one end of each pastry strip. Top with a heaped teaspoonful of the feta mixture and roll up the pastry to form a parcel. Repeat with the remaining pastry, feta and onion mixtures.
6.Place the parcels on a baking sheet lined with baking parchment. Brush each parcel with melted butter and bake for 15 minutes, or until golden brown.
