Ingredients

4 bananas , ripe and sliced in half lengthways ( or a can of apple or peach or pear halves , mixed berries etc , discard juice )
2 tablespoons butter
1/2 cup sugar
1 -2 tablespoon brandy ( or can use other complimentary liqueur instead )
2 tablespoons toasted sliced almonds ( optional )

Instructions

1.Preheat the oven to 180⁰C (or 160⁰C for a fan oven).
2.Melt the butter over low heat in a 25 cm oven-resistant frying pan.
3.Add sugar to the pan and stir to combine.
4.Add the sliced bananas (or other fruit) to the pan, in a circular pattern with the cut side facing down.
5.Drizzle the brandy (or other liqueur) around the pan.
6.Turn the heat up to medium-high and cook for 5 to 7 minutes or until the fruit is caramelized.
7.Unroll the puff pastry and place it over the caramelized fruit, tucking the edges of the pastry into the pan.
8.Bake in the oven for 20 to 25 minutes or until the pastry is golden brown.
9.Let the tarte cool for 5 minutes before turning it upside down onto a plate.
10.Sprinkle with toasted sliced almonds before serving (optional).
