Ingredients

1 cup low-fat yogurt
1/4 cup roasted pistachios , coarsely chopped
1/4 teaspoon ground nutmeg
1 tablespoon caster sugar
6 large fresh figs
1 tablespoon honey

Instructions

1.Put the yogurt, 2 tablespoons of the pistachios and the nutmeg into a small bowl, mix and set aside.
2.Sprinkle the caster sugar evenly over the base of a small non-stick frying pan, place over a low heat and cook for 3-4 minutes or until the sugar has melted and turned golden in colour.
3.Slice the stalks off the figs and trim the base so they will stand upright. Sit them cut side down in the caramel, increase the heat to medium and cook for 1-2 minutes or until the figs start to soften and the caramel turns a rich golden brown.
4.Mix together the honey with 1 tablespoon of water and spoon over the figs. Toss gently in the caramel for 2 minutes until the figs are well coated in the honey.
5.Serve the figs with the spiced yoghurt and the remaining chopped pistachios scattered over.
