2 ounces butter , melted
8 sheets phyllo pastry
4 tablespoons icing sugar
1/2 pint double cream
4 ounces caster sugar
3 large bananas , peeled and cut into 1 inch chunks
Caramelized Banana Tartlets are a perfect dessert that can be whipped up in no time and are perfect for those with a sweet tooth. Instructions

1.Preheat the oven to 180°C
2.Brush each sheet of phyllo pastry with melted butter and dust with icing sugar
3.Layer 4 sheets of the pastry on top of each other and cut into 12 rounds (4 inches each)
4.Press each round into a shallow cupcake tin
5.In a pan, melt the caster sugar over low heat until caramelized
6.Add the banana chunks and cook for 2 minutes
7.Distribute the banana mixture into the pastry cases
8.Bake for 15-20 minutes until golden brown
9.Serve with a dollop of double cream on top
