1 1/2 cups all-purpose flour | |
1/2 cup butter , cut into pieces , plus | |
10 teaspoons butter | |
3 tablespoons brown sugar , softened , plus | |
3 teaspoons brown sugar , softened | |
1 can sweetened condensed milk | |
5 1/2 ounces milk chocolate |
1. | Preheat the oven to 350°F. |
2. | Sift the flour into a bowl. Rub the butter into the flour until the mixture resembles breadcrumbs. Stir in the brown sugar and mix well. |
3. | Press the mixture into a buttered 9 inch square cake pan, smoothing the surface as much as possible. |
4. | Bake in the oven for 20-25 minutes, or until golden-brown. |
5. | While the shortbread is baking, melt the remaining butter in a pan. Add the condensed milk and brown sugar and bring to the boil, stirring continuously. |
6. | Pour the caramel over the shortbread base and leave to cool for 10-15 minutes. |
7. | Melt the chocolate in the microwave or in a bowl set over a pan of boiling water. Spread over the caramel and chill in the fridge until set. |
