2 1/4 cups self-raising flour
2/3 cup caster sugar
125 g butter , melted , cooled
3/4 cup milk
2 eggs
1 teaspoon vanilla essence

Instructions

1.Preheat your oven to 180C and line a 12-hole muffin tin with paper cases.
2.Sift the self-raising flour into a large bowl and add sugar.
3.In another bowl, mix together melted butter, milk, eggs, and vanilla essence.
4.Combine the dry and wet mixtures, stirring until just combined.
5.Spoon the muffin mixture into the paper cases, filling each one 2/3 full.
6.Gently push one caramel Easter egg in the center of each muffin, then add a little more mixture to cover it.
7.Bake for 20-22 minutes or until a skewer inserted into the center comes out clean.
8.Leave to cool down for 5 minutes before transferring the muffins to a wire rack to cool completely.
