Instructions

2.In a small heavy pan over low heat, stir 3/4 cup of the sugar with 1/4 cup water until sugar dissolves. Set aside to cool completely.
3.In a large bowl, combine the remaining sugar, 2 cups cream, and 1 tsp vanilla. Whisk until it moderately thickens. Add in lemon zest and mascarpone cheese and continue to whisk until thoroughly combined.
4.In a small bowl, whisk together cornstarch and 1 tablespoon of the reserved tangerine juice until the cornstarch is dissolved. Set aside.
5.In a non-stick frying pan over medium heat, take one ladyfinger at a time and pan-roast it, constantly turning it over, until it slightly turns brownish. Repeat for all. Set aside.
6.Take a large rectangular dish and arrange one layer of ladyfingers on it, slightly overlapping one another. Brush the ladyfingers with some of the remaining tangerine juice. Top the ladyfingers with one layer of tangerine segments. Pour half the mascarpone mixture over the tangerines. Drizzle with half of the cooled caramel sauce. Repeat with the second layer of ladyfingers, tangerine segments, and the rest of the mascarpone mixture. Drizzle with the remaining caramel sauce.
7.Chill the tiramisu in the refrigerator overnight or for at least 4 hours. Before serving, garnish with mint sprigs.
