Ingredients

6 very large onions ( or 8 onions that are merely large )
8 tablespoons lightly-salted butter
1/3 teaspoon nutmeg
1 -2 teaspoon sugar
1/2 teaspoon salt
3 tablespoons flour
8 cans campbell 's beef broth
1/2 - 3/4 cup dry vermouth
1 capful Kitchen Bouquet
1 -2 cup garlic-flavored croutons ( enough to cover the top of whatever casserole dish you end up using in the final step )
1/2 cup swiss cheese , cut in julienne strips
1/2 cup gruyere cheese , cut in julienne strips
parmesan cheese
1 loaf stale Italian bread or 1 loaf French bread
olive oil
garlic clove

Instructions

1.Slice onions to the desired size.
2.In a large pot or Dutch oven, melt the butter over medium heat. Add onions, nutmeg, sugar, and salt. Stir to combine until onions are uniformly coated with butter mixture.
3.Continue cooking over medium heat for 30-40 minutes, stirring occasionally, until the onions caramelize and turn a light brown. Reduce heat if they begin to burn.
4.Sprinkle flour over onions, stirring constantly to prevent clumps. Cook for an additional 2 minutes.
5.Add beef broth, dry vermouth, and Kitchen Bouquet to pot. Stir to combine all ingredients. Bring soup to a simmer, then lower heat and cook for 45 minutes.
6.Preheat oven to 350°F.
7.While soup is cooking, prepare the croutons. Cut the bread into cubes, coat with olive oil, and sprinkle with garlic. Toast the cubes in the oven for 10-15 minutes until crispy.
8.Ladle soup into oven-safe bowls. Top each bowl with croutons and a mixture of Swiss and Gruyere cheese. Sprinkle with Parmesan cheese.
9.Broil in the oven for 2-3 minutes until cheese is melted and bubbly.
