Ingredients

2 tablespoons olive oil
1 medium onion , chopped
1 garlic clove , crushed
1/2 small eggplant , finely chopped
1 tablespoon chopped flat leaf parsley
1 tablespoon chopped fresh oregano
2 teaspoons capers , roughly chopped
4 anchovy fillets , chopped finely
1/4 cup stale breadcrumbs
1/4 cup grated parmesan cheese
2 medium red capsicums ( bell peppers )
Capsicums ( bell peppers ) stuffed with tomato anchovy filling is a delicious and healthy main dish. Instructions

1.Preheat oven to 180 degrees Celsius
2.Heat oil in a pan over medium heat. Add onion, garlic and eggplant. Cook, stirring occasionally, for 10 minutes or until softened.
3.Stir in parsley, oregano, capers, anchovies and breadcrumbs. Cook mixture for 2 to 3 minutes or until fragrant
4.Add grated parmesan cheese. Cook, stirring, for 1 minute or until cheese has melted
5.Cut tops from capsicums ( bell pepper ) and remove the cores and seeds. Fill the mixture to the capsicums and replace the capsicum tops. Place them in a roasting pan, lined with baking paper
6.Cover the roasting pan with foil and bake it for 35 to 40 minutes or until capsicums ( bell peppers ) are tender and filling is golden
7.Serve

PROS

Capsicums/Bell Peppers are low in calories and high in vitamins A and C.

CONS

Anchovies can be quite salty, which may not appeal to individuals who are watching their salt intake.
