5 cups stock

1 onion , finely diced
1 1/2 cups arborio rice
2 garlic cloves , crushed
1/2 cup pesto sauce ( or 1/2 cup ready made from a jars )
1 cup sliced artichoke
3/4 cup red capsicum , sliced
1 cup sun-dried tomato , sliced
salt and pepper
parmesan cheese , to serve

Instructions

6.Add the pesto sauce, artichoke, red capsicum and sun-dried tomato, stirring well to combine all ingredients.
7.Season with salt and pepper to taste.
8.Serve with parmesan cheese.
