Cappuccino Nanaimo Bars and friends are a twist on the classic Canadian dessert, Nanaimo Bars. They were originally created in the city of Nanaimo, British Columbia, and are made up of three layers. The first layer is a mixture of graham cracker crumbs, shredded coconut, and chopped walnuts. This layer is then topped with a creamy vanilla butter icing and finally a layer of melted chocolate. In this version, the first layer has a twist with the addition of cappuccino flavoring, which adds depth and richness to the classic recipe. Instructions

1.In a heavy saucepan, combine 1/2 cup butter, sugar, cocoa and egg yolk.
2.Cook over low heat, stirring constantly, until mixture is thickened, about 5 minutes.
3.In a large bowl, combine graham cracker crumbs, coconut and walnuts.
4.Dissolve coffee granules in hot water and add to the bowl.
5.Stir in butter and vanilla until well mixed.
6.Press mixture into a 9-in. square pan.
7.Refrigerate while preparing the second layer.
8.For the second layer, cream butter in a large bowl.
9.Gradually beat in cherry juice, almond flavoring and icing sugar until smooth.
10.Add chopped cherries and mix well.
11.Spread over first layer and keep in refrigerator while preparing third layer.
12.For the third layer, cream butter in a large bowl.
13.Gradually add milk, peppermint extract, food coloring and icing sugar until smooth.
14.Spread over second layer.
15.For the topping, melt chocolate and butter in a small saucepan over low heat.
16.Spread over third layer and chill until firm.
17.Cut into bars and serve chilled.
