Ingredients

1/4 cup olive oil
1 stalk celery , chopped
1 eggplant , cut into 1/2 inch pieces

14 ounces tomatoes , canned , diced
3 tablespoons raisins
1/2 teaspoon dried oregano leaves
fresh ground black pepper , to taste
1/4 cup red wine vinegar
2 teaspoons sugar
1 tablespoon capers , drained
1 loaf ciabatta , cut crosswise into 6 equal pieces
2 garlic cloves , peeled
6 slices mozzarella cheese , drained fresh , water-packed
The Caponata Picnic Sandwich is a classic Mediterranean dish that originated from Sicily. Instructions

1.Heat olive oil in a large skillet over medium heat. Add chopped celery into it and stir it a bit. Add eggplant and keep stirring. Cook until its tender for about 10 minutes. Sprinkle salt and stir well. Add chopped red bell pepper along with onions and cook for 5 more minutes.
2.Add canned tomatoes, dried oregano leaves, black pepper, and raisins to the skillet. Stir them well and cook for 5-10 minutes until the ingredients are properly combined.
3.Preheat the oven to 350°F/175°C. Cut 6 equal pieces of ciabatta and slice them uniformly. Mix boiled garlic and olive oil together and spread it on the slices of ciabatta. Put cheese on top of a few slices of bread and bake them for 4-5 minutes until the cheese is melted.
