Ingredients

1/2 cup olive oil , for frying ( plus more if needed )
3 medium eggplants , cut into small dice
3 small green zucchini , quartered and cut into 1/4-inch pieces
3 small yellow squash , quartered and cut into 1/4-inch pieces
2 onions , chopped 1/4-inch pieces
6 celery ribs , cut into 1/4-inch slices
3 garlic cloves , thinly sliced
1 1/2 cups red wine vinegar
2 tablespoons sugar
1 cup roasted red pepper , thinly sliced
1 cup kalamata olive , pitted and chopped
1 cup capers
salt & freshly ground black pepper
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh oregano leaves
2 cups prepared marinara sauce
1 can diced tomatoes

Instructions

1.In a large frying pan, heat the olive oil over medium-high heat.
2.Add the eggplants and fry them until golden brown for about 10-12 minutes.
3.Remove the eggplants from the pan and set aside.
4.Add more olive oil to the pan and add the zucchinis, yellow squash, onions, celery, and garlic. Fry for 8-10 minutes until the vegetables are tender.
5.In a small bowl, mix together the red wine vinegar and sugar until the sugar dissolves.
6.Add the roasted red pepper, kalamata olives, and capers to the pan and fry for another 5 minutes.
7.Stir in the vinegar and sugar mixture, salt, pepper, parsley, oregano, marinara sauce, and diced tomatoes.
8.Reduce the heat to low and simmer for 45 minutes.
9.Once done, serve it hot or cold as desired.
