Instructions

1.Preheat oven to 375°F (190°C).
2.In a small bowl, combine capers, Italian parsley, breadcrumbs, and anchovy paste.
3.Spread 1/4 of the mixture onto each veal scallopini. Roll up the scallopini and secure with toothpicks.
4.In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add garlic and cook, stirring constantly, until fragrant, about 30 seconds. Add the stuffed veal rolls and brown all sides.
5.Once browned, transfer the skillet to the oven and bake for 20-25 minutes or until the internal temperature reaches 145°F (63°C).
6.In a separate skillet over medium heat, add the remaining olive oil and butter. Add crushed tomatoes and red pepper flakes; cook until heated through. Add spinach and toss until wilted.
7.Cook spaghetti according to package instructions and serve alongside the stuffed veal rolls and tomato-spinach mixture. Enjoy!
