3 cups all-purpose flour
1 cup granulated sugar
1/4 teaspoon salt
1/2 teaspoon baking soda
1 cup shortening ( at room temperature )
1 egg , lightly beaten
1/4 teaspoon vanilla extract
1/2 teaspoon almond extract
1 cup almonds , blanched

Instructions

1.Preheat the oven to 350°F (180°C).
2.In a large bowl, sift flour, sugar, salt, and baking soda.
3.Mix in shortening and add lightly beaten egg, vanilla extract, and almond extract.
4.Combine all ingredients until it forms a dough.
5.Add the blanched almonds and mix again.
6.Roll the dough into balls of about 1 tablespoon.
7.Grease a cookie sheet or line it with parchment paper.
8.Place balls of dough onto the baking sheet, leaving about 2 inches (5cm) between each cookie.
9.Bake for 15-20 minutes until the cookies turn golden brown.
10.Let cool, and sprinkle powdered sugar on top.
