Instructions

1.Preheat the oven to 350°F (180°C)
2.Finely chop the onion, celery, carrot, and leek.

5.Heat the beef drippings in a large casserole dish over medium heat.

11.Add the beef stock, bay leaves, and thyme sprig to the casserole dish, stirring well.
12.Stir in the diced lamb kidneys.
13.Roll out the puff pastry dough to fit the casserole dish.
14.Brush the edges of the dish with beaten egg to create a seal.
15.Place the puff pastry over the top of the dish, pressing the edges down to seal.
16.Brush the top of the pastry with beaten egg.
17.Cut a small hole in the center of the pastry to vent steam.
18.Bake the casserole for 1 hour and 30 minutes, or until the pastry is golden brown.
