Ingredients

Filling :
2 pounds sheep 's milk ricotta cheese
1 1/2 cups confectioners ' sugar
1/4 cup mixed peel
1 1/2 ounces dark chocolate , finely chopped
Cannoli Shells :
1 1/4 cups all-purpose flour
3 tablespoons dry Marsala wine , or more to taste
1 tablespoon butter , softened
1 tablespoon white sugar
2 teaspoons vinegar , or more to taste
corn oil for frying
Topping :
3 tablespoons chopped pistachio nuts
2 tablespoons confectioners ' sugar , or to taste
Cannoli alla Siciliana, a popular Sicilian dessert, is made with fried pastry dough that's shaped into tubes filled with creamy sweetened sheep milk ricotta cheese. The filling is studded with mixed peel and dark chocolate and sprinkled with pistachio nuts and confectioner's sugar. Instructions

1.Combine all the cannoli shell ingredients in a bowl until a workable dough is formed
2.On floured surface, knead dough and roll it out to 1/8-inch thickness
3.Use a 4-inch round cutter to cut out circles of dough
4.Wrap dough circles around metal cannoli tubes, and brush beaten egg onto overlapping dough
5.Heat oil in a deep-fryer or heavy skillet to 375F (190C)
6.Fry cannoli shells until golden brown
7.Drain fried shells on paper towels, and let it cool
8.In a bowl, combine all ingredients for the filling and mix until smooth
9.Fill the shells with the prepared filling using a pastry bag or teaspoon
10.Garnish with pistachio nuts and confectioners' sugar and serve immediately.
